Whether you are a professional pastry chef or a home baker, this series is the perfect opportunity to showcase your skills and share your love of baking with Upshur County.


At Sunday Sweets, we believe baking is an art form that should be shared and celebrated. From classic cakes to trendy desserts, there is no limit to the creativity and deliciousness that can be achieved with a few simple ingredients and a passion for baking.


Each week, we will feature a new recipe submitted by one of our readers. Whether you have a family recipe that has been passed down for generations or a brand-new creation that you just can't wait to share, we want to hear from you!

For our inaugural edition, we have a submission from our Publisher who has shared his favorite gluten-free sweet. What makes it so special? It's a classic dessert with a gluten-free twist for the gluten intolerant or those who have Celiac disease.

Here's a delicious gluten-free muffin recipe inspired by a bougie NYC bakery. If you're a fan of scrumptious baked goods but have to be mindful of gluten intolerance or Celiac disease, this gluten-free muffin recipe is the perfect treat for you.

Ingredients:

  • 1 1/2 cups almond flour

  • 1/2 cup coconut flour

  • 1/2 cup tapioca flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1/2 cup coconut oil, melted

  • 3/4 cup honey

  • 3 large eggs

  • 1 tsp vanilla extract

  • 1/2 cup blueberries

  • 1/2 cup chopped walnuts

Directions:

  1. Preheat your oven to 350°F. Line a muffin tin with paper liners.

  2. In a large bowl, whisk together the almond flour, coconut flour, tapioca flour, baking powder, baking soda, and salt.

  3. In a separate bowl, mix together the melted coconut oil, honey, eggs, and vanilla extract.

  4. Add the wet ingredients to the dry ingredients and stir until fully combined.

  5. Fold in the blueberries and chopped walnuts.

  6. Using a spoon or ice cream scoop, divide the batter evenly among the muffin cups.

  7. Bake the muffins for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

  8. Remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
